Hazelnut Zucchini Bread

Ingredients

Hazelnut Zucchini Bread on a cooling rack with a bag of Natural Hazelnuts next to it.
  • 2 cups all purpose flour

  • 1 cup hazelnut meal 

  • 1 tsp salt 1 tsp baking soda

  • 1 tsp baking powder

  • 1 Tbs ground cinnamon

  • 1 tsp ground allspice

  • 1/2 tsp ground nutmeg

  • 3 eggs

  • 1 cup vegetable oil

  • 2 cups granulated sugar

  • 3 tsp vanilla extract

  • 3 cups grated zucchini

  • 1 cup rough chopped natural hazelnuts 


Directions

  1. Grease and flour 2 8 x 4 inch loaf pans .

  2. Mix together flour, spices, baking powder and soda, salt.

  3. Beat eggs, sugar, oil, vanilla.

  4. Combine wet and dry ingredients.

  5. Add zucchini and nuts.

  6. Bake at 325 degrees for about 50-60 minutes or until a toothpick comes out clean.

  7. Cool in pans for 20 minutes. This freezes well.
